Butterscotch Apple Muffins

Fact: If I get bored on a Sunday we end up with a muffin surplus at our house. However, these muffins were promptly devoured. The combination of apple and butterscotch is kind of like caramel apples in a muffin. Who can resist that?

Butterscotch Apple Muffins

Ingredients:

1-1/2 Cups All Purpose Flour

2 teaspoons baking powder

3/4 teaspoon salt

1/2 teaspoon cinnamon

1 egg

1 Cup diced apples

3 Tablespoons oil

3/4 cup milk

3 Tablespoons sugar

1/2 cup butterscotch morsels

Pre heat oven to 425 degrees F. Mix the dry ingredients together. In separate bowl mix the wet ingredients together, then combine the wet and dry ingredients. Stir until the flour is absorbed into the batter. Spray muffin man with cooking spray and fill with the batter. The cups should be about 2/3 full. Bake for 20-25 minutes. Makes 12 muffins.

  1. Yummy! The combination of ingredients make so much sense, yet I’ve never thought to put them together in a muffin. These look delicious – wish I could smell them 🙂 Guess I’ll have to bake some up real soon!
