So, this is more of an assembly method than a recipe. Brace yourself because there’s more posts were that came from. I’m much happier cooking with a method or formula than a rigid recipe. In fact if I post a recipe on this blog you can be assured that its darned good because I rarely can be bothered to look up a recipe.
Anyway, I saw a picture of something similar to this on pintrest and thus dinner was born. This is a go to for me when I am cooking ahead of schedule. It’s quick to put together while something else is cooking on the stove top. Then it can be popped into the oven while we’re eating dinner or it can be refrigerated to be baked then next day.
Winner Winner Chicken Dinner:
2 large chicken breasts
3-4 Medium sized potatoes cubed
Dried Italian herbs or seasoning of your choice – be creative!
Vegetable of your choosing – green beans (canned fresh or frozen), onions, carrots, frozen veggie medly
Preheat oven to 400 degrees F. Halve the chicken breasts and arrange down the center of a 13 x 9 baking dish. Cube potatoes and arrange down one side, arrange vegetables down the opposite side. Drizzle with oil, sprinkle with salt, garlic powder and Italian herbs. Massage the oil and seasoning into each ingredient so it is distributed well. Bake uncovered for 30-40 minutes or until the potatoes can be easily pierced with a fork or knife and the chicken is cooked through. Makes 4 large servings.
