One Pot Meal -How to Stretch Taco Meat

If you want to make the ground beef in your freezer go a little further, stretch it with other ingredients. For taco meat I prefer to add rice to the browned beef. At first I would cook the rice separately, but it really isn’t necessary to get another pot dirty.

Ingredients:
– Ground beef

– Minute Rice

– Taco Seasoning

– Veggies: Diced onion, or caned chillis and tomatoes, undrained (optional)

– Water

In a large skillet that has a lid, brown your ground beef and veggies. I use  roughly 2 parts beef to one part dry rice ratio by volume.

How to Stretch Taco Meat

Once cooked through add the minute rice and add water in the same volume as your rice {i.e. 1 cup rice, 1 cup water…} and stir.

Cover the skillet and maintain a simmer for the cooking time noted on the rice box. Typically 5 minutes. Stir occasionally if the water doesn’t completely cover the rice mixture.

Once the rice is cooked, it might look like there is way too much water. Fear not, the taco seasoning will soak some of it up.

Add the taco seasoning {check out the DIY taco seasoning I use here} and simmer until the sauce is thick enough to serve.

Serve in tacos, taco bowls, taco casserole, taco salad, or frito chilli pie
