BBZB (Blueberry Banana Zucchini Bread)

Fresh Blueberries, Zuchini and Bananas

Ingredients:
3 eggs
1 cup oil
2 cups sugar
1 teaspoon cinnamon
1 teaspoon salt
1-1/2 cups grated zuchini (you don’t have to peel it)
2-1/4 cups flower
1 teaspoon baking powder
1 banana
1/2 pint of fresh blueberries

Dice zucchini and blend in blender until mostly smooth. It is ok if there are a few small chunks left. Move zucchini to work bowl. Blend eggs, sugar, and oil until thick and move to work bowl. Finely dice banana and add to other ingredients. Fold in dry ingredients, flour, cinnamon, salt and baking soda. Fold in blueberries. Greese two 9″ x 5″ pans or two muffin pans. Bake at 350 F for 1 hour if making bread or 40 minutes if making muffins, or until a fork inserted comes out clean.The Finished ProductBBZB
